Instructions
Microwave directions:In a 3-quart microwaveable bowl, combine rice-vermicelli mix and 4 tablespoons of butter or margarine. Microwave uncovered at high for 1 minute. Stir. Microwave at high 3-4 minutes or until vermicelli is golden brown. Remove and stir in 5 1/2 cups water and special seasonings. Microwave uncovered, at high 23-26 minutes or until rice is tender. Let stand 5 minutes before serving.Microwave ovens vary; adjust times as needed.Less fat directions:Follow range top or microwave directions, except substitute margarine with 1/2 tablespoon olive oil.Fat reduced to 3.5g from 9g per serving.Saturated fat reduced to 0g from 2g per serving.Trans fat reduced to 0g from 1.5g per serving.30 calories from fat per serving.Preferred method.Rice range top directions.What you need.1/4 cup butter or margarine.5 cups water.1. In a large skillet, combine rice-vermicelli mix and butter or margarine. Saute over medium heat until vermicelli is golden brown, stirring frequently.2. Slowly stir in water and special seasonings; bring to a boil.3. Cover and reduce heat to medium-low. Simmer 20 to 25 minutes or until rice is tender. Let stand 3 to 5 minutes before serving.About 6 cups prepared. Enjoy!Make it a meal.Easy as 1-2-3:1. Stir in broccoli florets during last 5 minutes of simmering.2. Add cooked chicken breast, sliced into pieces once rice is tender.3. Top with shredded cheddar cheese before serving (optional).

I've use Rice-A-Roni for years, but I have to say I'm not a real fan of this chicken one. I simply didn't care for the taste but you might like it just fine. Try it some time when you're having some baked chicken.

At any given time there's a couple dozen boxes of these in my pantry. My toddler loves this rice and it's a safe food for her to eat and we navigate many allergies. I like to serve it with peppers, onions and sausage and I think they pair perfectly.
