Not turning out

I am cooking my first loaf right now and I am disappointed in the directions for making bread. It has instructions on how to make hamburger buns but not bread, like the package shows. I also had to add extra flour as after adding all the ingredients it was too loose, not a regular dough consistency. Also with using 2 Tbs of yeast, which seems a lot, it rose up very quickly but then fell as soon as I touched the pan. It rose back up pretty quick and now I am baking it. It smells very yeasty and I am curious as to the texture and taste. I've never made this before but all the recipes online show a regular dough consistency, not this sticky messy stuff. Maybe I'm doing something wrong, but I followed the directions for making the buns thinking that this would be the same for the bread.
