The casing has a good snap when you bite it

i've been eating these pretty regularly about five every six weeks or so. I grill them on a Weber grill heated to 350 and cook for 15 minutes on the unheated side and then three minutes per side on the heated side of the grill. The casing has a good snap when I bite it. I put spicy mustard and pickle relish on them. I use a high-quality bun such as Dave's bread.
