Extra-fine sugar is beneficial when you are trying to dissolve it in cold drinks, such as iced tea. Have you ever ordered iced tea at a restaurant, only to discover they don't offer sweetened tea? You find yourself trying to dissolve regular sugar in a glass of tea and ice. Common sugar is difficult to dissolve in this manner.
