What is the difference between corn and flour tortillas?
Corn tortillas are traditionally made from rolled corn flour. Flour tortillas consist of wheat flour, shortening or lard, baking soda, salt, and other ingredients. Corn tortillas tend to be slightly drier and more brittle than the softer and sturdier flour tortillas. However, if made in the traditional fashion with exclusively corn flour, corn has a nutritional advantage over flour because they are completely whole-grain.
Can I eat tortillas if I am trying to avoid gluten?
Traditional corn tortillas made entirely from corn flour do not contain gluten. Mass-produced corn tortillas may have additional ingredients added to them, so it is always advised to read the nutrition label if you are avoiding certain foods. Flour tortillas do not fit a gluten-free diet because of the wheat used to make them.
What is the best way to store tortillas?
Always keep tortillas in an airtight container or resealable plastic bag. They will stay fresh in the refrigerator for up to two weeks. If you do not plan to use them all right away, separate each one with parchment or wax paper, and place them in the freezer in an airtight freezer bag or container for up to eight months. The paper in-between will prevent tearing when you are ready to take individual tortillas out of the freezer for use.
