The best way to cook thick and expensive meat

I bought this for my son because it is compact and has full digital controls which I prefer to WiFi models. We tested it on a 20 pound standing rib roast, sectioned into three pieces. We pan sears each piece, then placed each into their own bag with sauteed herbs. We then sous vide all three in a cooler at 140 degrees for 6 hours. Then, we removed the bagged cooked pieces and coated with a dry rub, then placed (one at a time) in his Green Egg for the final sear. The result...PERFECT! All of our 16 Christmas dinner guest raved over the meal.
