It comes out perfecto and its—not too dried out, not undercooked, and it literally falls off the bone. I take a baster and hit it between the slices with that juice, and man, it's incredible. The ultimate test? I put the leftovers in a resealaable bag, and my teenager completely inhaled it by the next day. If it can survive a teenager, it's a winner. I'll have this holiday or not but we definitely enjoy it.
