I tried freezing a loaf and was not as happy with the outcome, the crust was much harder in spots and the flavor is not as good to my taste. I rarely go for healthy choices but now I have to choose a healthier choice. So in looking for a healthy bread, this is the one I settled on because it has good taste good texture and it meets all my needs as far as being low-carb good fiber without tasting like cardboard or plywood. I actually like it not just tolerate it. It would certainly be worth trying because I think you'll be pleasantly surprised. I guess plain Old white bread is out of my future forever.
