Instructions
You Will Need: 3 large eggs; 2 tablespoons vegetable oil; 2 tsp. vanilla extract; 1 cup milk; 3/4 cup (1-1/2 sticks) unsalted butter, softened. Butter and milk can be replaced with any non-dairy alternative. 1. Heat oven to 350 degrees F. Grease the bottom and sides of two 8 inch or 9 inch round cake pans. 2. In a large bowl, beat cake mix and butter, until course crumbs form. Add the milk, eggs, oil and vanilla, and beat on high speed until silky smooth. Pour into pans. 3. Bake 25-30 min, or until toothpick inserted into center comes out clean. Cool 10 minutes in pan, then cool completely on wire rack before frosting. Cupcake Pan: Bake 16-20 minutes. Mini Cupcake Pan: Bake 10-12 minutes. 9 inch x 13 inch Pan: Bake 25-35 minutes.

Hands down best Gluten Free Cake mix!
We LOVED this cake mix! I originally found it at Grocery Outlet with a few other mixes and was elated to find it online at Walmart! I used coconut milk and plant based butter to make it dairy free. I also used olive oil instead of vegetable oil. It is incredibly moist, the best Gluten Free cake mix we have tried. We then frosted it with Miss Jones Organic frosting, Vanilla. I did add a bit of lemon extract to the frosting. Nobody can tell that this is a Gluten Free cake! Stocking up my pantry with more!
