Instructions
You will need: 3 large eggs, 3/4 cup water, 1/2 cup oil (any type), 1/3 cup unsweetened applesauce. For additional flavor variations, you may add 1/2 cup of walnuts, raisins, coconut, and/or crushed pineapple. Step 1: Heat oven to 350 Degrees F. Grease the bottom and sides or two 8" or 9" round cake pans. For easy cake removal, line the bottom of the pans with parchment paper. Step 2: In a large bowl, whisk the eggs, oil, water and applesauce. Add cake mix and beat until thoroughly combined. Pour into pans. Step 3: Bake 25-30 min, or until toothpick inserted into center comes out clean. Cool 10 minutes in pan, then cool completely on wire rack before frosting. Alternate Pan sizes: Cupcake Pan: 16-20 minutes; mini cupcake pan 10-12 minutes; 9x13": 25-35 min.

It's DELICIOUS! I make it for my non-gluten free family too and everyone likes this carrot cake. I like that it calls for applesauce to reduce the amount of oil that you put in it. Applesauce is a great substitute for oil in the baking of cakes and breads.
