Good quality cornish hens, good size, and good amount of meat. I used these to make chicken stock and then used some of the stock to make tom kha gai. I serve the tom kha gai with a whole cornish hen per person for a low carb, high protein meal. I'll set some of the stock aside to make risotto. With the rest of the stock, I plan to boil again with chicken drumsticks added to make into pho broth. These hens could certainly be baked or grilled, and I've prepared them that way before, so I like how versatile these are depending on what I'm in the mood to cook and eat.
