Instead, the flavor is bold yet sweet, earthy, and nutty from the tubers, grasses, nuts, and roots that the animals eat when they forage. This gourmet bacon has been lightly smoked and cured, adding saltiness and smokiness to the profile. It's also much leaner than regular pork without skimping on the sheer enjoyment factor of regular bacon. Because wild boars are an invasive, destructive species without any natural predators, eating this bacon is also a sustainable choice! The wild boar is trapped humanely, never chased.
