In my opinion, I believe that customers get influenced by the wooden block that holds the knives. Most time the knives have to be sharpened constantly and eventually they become resistant to some sharpening methods and the whole set turns into a kitchen decoration. These knives are not like that at all. You could definitely use this set in a commercial kitchen. They have a razor shop edge that slices through anything like it's butter. I love this set so much that I actually bought 2 and I know that I will never have to purchase another set in my lifetime. Even the shears are sharp and come in 2 pieces so that food won't get stuck and it will never rust like most kitchen shears. This is an excellent product. It caught me off-guard for such quality to be so inexpensive.
