Sweet Potatoes Whole Fresh, Each

I wanted to try something new...I read on a food blog that it works well to cut the sweet potatoes in half lengthwise, brush the cut surfaces with oil and seasonings, and roast them for half the time that a whole potato would take. It worked marvelously! Not only was it a much faster process, but there was some baked-in flavor from the oil and seasonings.

Sweet potatoes were small, blemished and knotty (used to getting decent sized , clear skinned in the past)… I would have had to order twice as many as I usually do to get the amount needed for the recipe. I don't know if it's that the people doing the shopping are not trained how to shop as if you're shopping for yourself or your mother, and how to pick good looking quality produce …or if Walmart just has bad quality produce.😫😫😫 pic below..spice jar for size comparison.
