I've made enchiladas before. never ever were they this small. it's like they cut a tortilla into to make 1. they differently should be bigger. I like the taste. that's the best part.

We have these enchiladas every 2-3 weeks and enjoy them so much! I like that they're made with chicken rather than beef. They're prepared on a bed of Spanish rice. Just add a green vegetable and you have a complete meal. I serve them with sour cream and slices of fresh avocado. To me, these enchiladas are best baked in the oven. But, when it's summer in the South, I'll pop 'em in the microwave!
