Duncan Hines Keto Friendly Classic Yellow Cake Mix, 10.6 oz.

If you're used to keto items made with almond and coconut flour, this is a comparable dessert. It does have a coconut flavor especially if you use the coconut oil. You could also use avocado oil, and I haven't tried yet, but probably melted butter too. I made 2 boxes in a 9x13 aluminum pan for a birthday cake and made a sugar free strawberry jello poke cake. I frosted it with a tub of sugar free cool whip mixed with a box of sugar free vanilla pudding. Even the people who weren't on keto and usually don't eat sugar free totally enjoyed it! :)

I've been using this cake mix to make a lower carb version of pineapple upside down cake as my diabetic mother likes this dessert, but the standard one is extremely high in carbs and she can't have it. As brown sugar is 12 gm carb a serving, I only use 8 Tbsp of it in the brown sugar and butter mix that goes on the bottom of the pan. (Some recipes use 1 1/2 cups brown sugar.) I use pineapple with no sugar added. This cake seems to bake up very similar to regular cake. It's browner on the edges by the time the cake is done in the middle. Our oven is a little slow and all recipes take the longer amount of time, so it is the same for this cake mix. I do use the coconut oil as this box mix instructs and also use coconut oil to grease the pan. I've made it twice, muffin size cakes and an 8” cake. It doesn't stick to my pans and is easy to get out.
