These Vollrath braisers are terrific for braising vegetables and bulky cuts of meat. The wide diameter and low height of the pan allows food to cook slowly with a small amount of liquid. These braisers have an impact resistant, 2 gauge 3004 aluminum construction that is made to endure the challenging demands of commercial kitchen use. The bottom half of the braiser is extra thick to distribute heat evenly and eliminate hot spots for delicious results every time. The durable loop handles are spot-welded for a strong bond to ensure safe lifting when transporting. The pan's interior is smooth to provide an easy-release cooking surface for trouble-free cleaning.
