“Trippa” an Underapprecited Dish!

Many people do not know anything about beef tripe. When told that it is a cow's stomach, they immediately recoil. Actually, they don't know what they are missing. I have experienced it in European, Mexican and Asian cuisines. My favorite is Italian. It is eaten all over Italy, but Trippa alla Romana, is probably the most recognized. In my recipe the tripe is simmered until tender, then placed in a pot of marinara sauce with onions and peppers. I love mushrooms, so I add sliced mushrooms to the party. Tripe is high in protein, relatively low in fat and is a magnificent dish. In Philly, my hometown, you can experience it on a hoagie roll. In restaurants or at home it can be served over spaghetti or linguini. If you have never had it before, be brave and give it a shot!
