El tempeh y el seitán se utilizan ampliamente en círculos vegetarianos, veganos, de alimentos integrales y macrobióticos. El tempeh es un producto de soja tradicional de Java que se elabora a partir de semillas de soja fermentadas. Se elabora mediante un proceso de cultivo natural y fermentación controlada que une la soja en forma de torta. Un hongo se utiliza en el proceso de fermentación y también se conoce como iniciador de tempeh. El tempeh tiene una textura carnosa, firme y absorbe muy bien los sabores, por lo que realmente puedes experimentar con diferentes adobos, salsas y mezclas de especias. ... No es solo su sabor, versatilidad y perfil nutricional lo que hace que el tempeh sea una gran fuente de proteínas. También es una opción mucho más sostenible en comparación con la carne. Por otro lado, el seitán es un alimento elaborado a base de gluten, la principal proteína del trigo. Se elabora lavando la masa de harina de trigo con agua hasta eliminar todos los gránulos de almidón, dejando el gluten insoluble pegajoso como una masa elástica, que luego se cuece antes de ser consumido. El seitán contiene 72 gramos de proteína de origen vegetal por taza, por lo que muchas personas que siguen una dieta vegana optan por consumir el alimento por su alto contenido de proteínas, accesibilidad y versatilidad. Es 8 también por eso que muchos productos cárnicos vegetarianos y veganos se basan en Seitán.
