This cookie mix is easy to make with simple added ingredients (butter, one egg, water). It always makes a fabulous cookie. This mix has a lighter bake than some others, and overall feels lighter and less chewy than others. For me, that is a positive.

Gluten free delicious!
Eating gluten free has been a challenge and i finally found a desert that i can enjoy and that taste great! I add peanut butter by replacing half of butter with peanut butter in recipe. This makes them soft and delicious especially when you first take out of oven. They stay soft and do not get hard when they cool. I would eat these within five days due to tasting stale after a week.
