Red Pepper & Tomato Soup is the BEST!!

You've got to try this red pepper and tomato soup. There's just something about it that's so delicious. It is not as acidic as a regular tomato soup. It is also not as salty. Since it is mixed with red peppers, there is a very very very slight sweet taste to it. Do not worry though, it goes SUPER well with the tomato soup. So delicious. I love cozying up with a giant bowl of this soup and some homemade crispy French bread on a snowy day. This will sure warm you up after a cold day in the snow. It's even great as a snack because it does not have many calories to it. You could eat the whole thing and it is still under 500 calories! Seriously try this. I've never heard of anyone hating it.

Fantastic & Versatile!

I really like this soup. I have tried other tomato soups as starter stocks before, but this one was exceptional. It can be used for all sorts of dishes -- beyond tomato soup! I used a little as the base for crostini toppings on toasted bread. As pictured, I have used it as a starter for vodka sauce, just add a spot of garlic, cream, cheese and vodka. You can use it with grilled veggies as a sauce topper. If you spice it up right, you can use this as a more mild version of enchilada sauce too. There are just so many things I can make out of one box of soup! Then when it is empty, fill it with water and then make a blander spanish rice with it for those in your home with sensitive stomachs! I think of a lot of the versatility in this soup is that it is made with red peppers. That alone gives it the edge over any other "canned" soup.

Great alone or as the base for a meal

I am not a big soup eater but I like tomato soup and a sandwich every once in awhile. Saw this Pacific organic roasted red pepper & tomato soup and thought yeah lets try something with a little spice. Also it having 50% less sodium than the regular soup was a bonus as well. I loved it so much I decided to toast some corn and grill some chicken and make a one pot meal. Also made some corn bread to go along with it. Great cold winter supper.
