Sticking to wood for now.

[This review was collected as part of a promotion.] Sticking to wood for now. Gas will be backup. Trying to figure out how to put some Oak or Hickory chips near the gas burner or on the stone to start smoking some and get the wood fired flavor and the best of both worlds. Something for the engineers to figure out at Ooni.

Works but other fuels likely better

[This review was collected as part of a promotion.] When set to the maximum gas output, it heats the oven fairly quick. Quicker than charcoal and lumber combination. However it does not reach temperatures as high as those. In fact, it struggles to get past 430C. As soon as I regulate it to a medium output the oven starts losing heat instead of maintaining it. I would expect this to happen on a low setting. Not on medium. This probably tells more about the oven then the gas attachment, but still worth mentioning. The instructions manual should also mentioned how to safely add and remove the hose. Which is definitely the hardest part about the installation/yearly maintenance.
