Lucky Seoul Original Kimchi, 14 oz Jar

Having spent my formative years in the Hawaiian Islands, I developed a taste for a variety of Asian foods. For several years now, I have purchased Lucky Seoul Original Kimchee to satiate my appetite for this probiotic delicacy. Rich in flavor, judiciously spiced, consistently fresh out of the bottle, and easy to purchase. Loaded with chunks of Napa cabbage and a savory sauce that complements my meals in all its fermented deliciousness. The brand also offers a Vegan %26 Hot variety. As the bottle's contents draw near to being empty, I love to top my steamed rice with the remaining juice and add Luck Seoul Original Kimchee to my grocery list. The family refrigerator is rarely without a jar of this wonderful Korean kimchee.

It's a bit mild for my taste (but still hot), but good flavor. The jar I got was pretty fresh, the cabbage still had some crunch. It's actively fermenting kimchi, as stated clearly on the label, the taste and texture will change with age. Also means it can't be vacuum sealed, it generates gas. Label clearly explains you need to open it carefully over a sink, as it may have pressure. The plastic seal over the lid was still hlding on mine, but if it went too long it would be sure to leak, which is unavoidable with active kimchi. Refrigeration will slow the fermentation and extend the shelf life, but it will still gradually get stronger and softer.
