this is a great pancake mix. A lot of gluten free pancake mixes Ive used in the past stick to our cast iron pan ( we don't use non stick). This not only was easy to cook but tasted great as well. I usually mix other stuff into our pancakes and this held up and did well with alterations such as using soy milk or amazake in it. I also love that it is higher in protein. I use this mix to make a lot of silver dollar size pancakes for my son so he and his dad can quickly make a weekend breakfast and let me sleep in. Highly recommend for taste and ease of making.
