Simply add water, eggs and oil to the baking mix and stir to combine. If desired, fold fresh, rinsed and drained blueberries into the batter, pour into a pan, top with streusel and bake for the recommended time in the instructions. Prepare this muffin mix for a quick breakfast or use it to make mini blueberry muffins for sweet snacks after school. This muffin mix is made with no preservatives or high fructose corn syrup, so you can feel good about the baked goods you serve. Each package makes 6 jumbo muffins, 12 regular muffins or 36 mini muffins.

Baking Instructions:1 Prep: Preheat oven to 400°F. Grease muffin pans or line with paper baking cups. Rinse and Drain blueberries thoroughly with cold water. Set aside.2 Mix: Empty muffin mix into large bowl. Stir 2 large eggs, 2/3 cup water and 1/2 cup vegetable oil into muffin mix until moistened (about 50 strokes). Batter will be slightly lumpy. Fold rinsed and drained blueberries gently into batter. Spoon batter into prepared muffin pans. Fill cups 2/3 full. Sprinkle streusel topping evenly over each muffin and tap lightly into surface.3 Bake: Bake in center of oven at 400°F following baking times provided. For 6 jumbo muffins, bake 20 to 23 minutes. For 12 medium muffins, bake 16 to 19 minutes. For 36 mini muffins, bake 10 to 13 minutes. Cool 5-10 minutes. Gently loosen muffins before removing from pan.No Cholesterol Recipe: Prepare and bake muffins following directions above, except using ½ cup egg substitute, 1/2 cup oil and 2/3 cup water.High Altitude (over 3,500 ft.): Stir 2 tablespoons flour into the mix. Wow, this was really, really good: I made six mini loaves with them... and they taste like something you might buy at a bakery, like they are really really good. The cake itself is very light and the streusel topping is a nice touch. Will absolutely, definitely buy again.

I am happy to have discovered this mix. It saves me a few steps, which is helpful. I really like that there is no high fructose, etc. I divide the batter into my jumbo muffin pan. (6 muffins). I add a generous handful of fresh or frozen organic blueberries into the batter. Hubby and I enjoy! 😋
