The Hickory Farms summer sausage is quite tasty. For lunch, I will make several crackers topped with sausage, cheese and pickles. I've also chopped some up and added to some pinto beans I was cooking to obtain that great meaty flavor. This would also make a wonderful gift if you know a summer sausage lover.
