Let it come to room temperature. It will be soft and spreadable. It can sit at room temperature for at least 2 days. I leave mine out longer and have yet to have it go rancid before it's all gone. I don't need to have a butter that's soft from the fridge. If I want that, I know I either have to buy a blend, or put in the microwave at 20% power (cut in half or thirds).
