I've recently been introduced to Asian cooking %26 the chef pointed out that Potato starch is often used over Corn starch as it blends better %26 gives a smoother finished product. Since buying it I've been using it in sauces %26 gravies %26 have to agree, provides a wonderful thickness without the lumps. Less fussy to mix than corn starch %26 healthier too.
