Creamy Chestnut Soup

Ingredients

1 teaspoon vegetable oil

2 cups diced onion

3/4 cup diced carrot

1/2 cup diced celery

1 1/2 tsp thyme

1 5.2-ounce bag Gefen Chestnuts

5 cups vegetable stock or chicken stock

Salt & Pepper to taste

1/3 cup heavy cream optional


This simple recipe is perfect for cold nights and very easy to make. Start by sauteing onions, carrots and celery in the oil till soft. While vegetables are sauteing, warm stock. in a blender, combine sauteed vegetables, warm stock, Gefen Chestnus and thyme. Blend till smooth, return to pot, season with salt and pepper add cream optional and simmer for 10 min.

Glazed Chestnuts

Ingredients

6 tablespoons butter or margarine

1/2 cup brown sugar

1/2 teaspoon salt

1 1/2 teaspoons vanilla extract

3 tablespoons sugar

2 5.2-ounce packages Gefen Chestnuts


In a saucepan over low heat, combine butter, sugar, salt and vanilla. Stir till sugar is dissolved, being careful not to burn. Remove from heat and pour over chestnuts, stirring to coat. Spread evenly on a baking sheet coated with parchment paper. Bake for 10 min at 350F, remove and cool.
