We have these enchiladas every 2-3 weeks and enjoy them so much! I like that they're made with chicken rather than beef. They're prepared on a bed of Spanish rice. Just add a green vegetable and you have a complete meal. I serve them with sour cream and slices of fresh avocado. To me, these enchiladas are best baked in the oven. But, when it's summer in the South, I'll pop 'em in the microwave!

Very delicious! The enchiladas were very flavorful and the ride was super good, not overpowering. My only complaint is that is says “family size” but it was barely enough food for two adults and one child. I recommend adding beans as a side or getting the larger portion because this definitely is not enough for a family.
For Stouffer's frozen products, serving sizes are based upon whether the food is considered a main dish or side dish. FDA's labeling regulations require all manufacturers to determine serving sizes using specific "reference amounts" which differ by food category.
