I'm trying to get in the habit of eating breakfast. I like these mini pancakes because I can microwave them in less than a minute. (I have a lower power microwave, so I wrap them in paper towel - that way they stay a bit moist and "steam" to perfection after I remove them. Don't nuke too long; it makes them tough.) My favorite way to eat Eggo mini pancakes is with warm blueberries %26 banana slices, a dollop of plain Greek yogurt, and a little natural berry syrup poured on top. Delish!
