A good knife is all about the blade material. I wanted a s/s blade this time, but there is a lot of confusion about what steel is better. S35VN (must have the "N") is highly recommended these days, but it can be expensive. Good price here from a good maker. Good balance, nice wide blade, enough handle. Future will tell if it is a pain to sharpen like some stainless knives. After looking at every S35 knife on the internet, I am happy with this one.
