A relative had one and loved it, so we ordered this model specifically because of it's larger size and pressure cooker ability. It does what it says it does, sous vide temps seem accurate. We just use brand-name freezer bags for sous vide and that works for us. (We did have to buy little weights to hold the bag in the water.)

Its an absolutely amazing product once I learned how to use it. The directions are not the best however I bought a few cookbooks which are life savers. I used it every single day for a month or so, and waited to see if the fascination continued. It has. I now use it at least 4 times a week for making stocks, soups, stews, brisket, dried beans and have even made a bundt cake. The flavours are so wonderfully intensified with pressure cooking. Time saved is also a huge benefit. Great to sauté and/or finish with slow cook or pressure cook. Am happily surprised with the pot in pot concept and more surprised this isn't included in a users manual or cookbook that comes with the Instant Pot itself. It cleans easily. I will purchase another seal ring to use exclusively for non savoury foods. I spray lid with diluted white vinegar and let sit for half hour before washing which helps. Then store unit with lid facing up so all parts can air out some cooking odours between use. The large unit takes a lot of space but worth every bit of it. I am a convert and will always have an instant pot in my kitchen.
