They’re an attractive addition to salads, baked goods, lemonade, and other summer snacks. Practitioners have used borage flowers and leaves to make borage tea as herbal medicine. You can save dried borage for later use. Cosmetic companies sometimes substitute oil from borage seeds for evening primrose oil. Permaculture enthusiasts use the borage plant as an “accumulator,” or a plant that accumulates nutrients and adds them to the soil.
