The standard variety for condiment use. Large, white roots make gourmet sauce - just chop and mix with vinegar. Ready to harvest after one year in your garden. Grows vigorously and produces large white roots. Does best in cool, moist, fertile soil. Plant the roots outdoors in the spring, summer or fall. Plant with the thick end up, upright or horizontally, about 18" apart. Horseradish is a perennial, plant it once and enjoy fresh horseradish every year. The bite and aroma of the horseradish root are almost absent until it is grated or ground. During this process, as the root cells are crushed, volatile oils known as isothiocyanate are released. Vinegar stops this reaction and stabilizes the flavor. For milder horseradish, vinegar is added. Hardy in zones 4-8. Bohemian Horseradish is a Czechoslovakian variety that is very disease resistant.
