It's been 50 years since I've eaten Tofu. I decided to try it again. I need to learn how to season it but I did cut it up and add it to chicken soup after heating it through in a skillet. This was much easier to work as opposed to the tofu I remembered from 50 yrs ago. This was firm and held it's shape well. it browned nicely in my non-stick saute pan. It gave my cream of chicken soup a bit more texture without adding a lot more calories.

Very nice tofu:)

Try this: freeze the tofu for (at least) a couple days in your deep freezer (0°F or colder.) Then, thaw it in warm water for a couple hours, until it's 100% thawed. Then, either with very large hands, or in a tofu press, squeeze all the excess water out of it. The slice it into 6 equal (2 x 3 inch about) rectangles. Lay flat (in a nonstick un-oiled skillet just large enough to hold the tofu, arranging the slices like bricks in a wall) press them firmly into the skillet, and cook on each side at medium high heat for 5 minutes, flip and slightly lower the heat for 6 minutes on the second side. It comes out the texture of cooked chicken breast and goes GORGEOUSLY in a stir-fry after that. Important to note: marinate the slices AFTER cooking, if you wish to do so. I like to slice the cooked pieces into 3/4 inch wide strips and marinate them overnight in teriyaki sauce, for my next-day's stir fry. DELICIOUS!!!

Can be cooked with various vegetables, meat, sauces and spices or prepared as salad, and have great nutritional values to boost, also have pleasing texture and absorb flavors well when made with other ingredients. Only downside is that it does not last long even in fridge after opening.
