So-called "Biscotti di Prato" (Prato Cookies) are twice-baked crunchy almond cookies commonly known as Cantucci or Cantuccini. They belong to the classic Tuscan confectionery, and are traditionally found in the Vin Santo (sweet dessert wine) at the end of a meal. Tuscan cantucci are generally made with almonds. In this special Cantuccini variant, created in 2013, the almonds are replaced with chunks of chocolate for an extra load of deliciousness. he Premiata Fabbrica di Biscotti Mattei was established in Prato in 1858. The quality of Mattei's iconic biscuits soon began to spread beyond city and regional boundaries, also thanks to an honourable mention at the Universal Exhibition in Paris in 1867.
