Enjoy Stouffer's Chicken Enchiladas!

This is one of my favorite dishes. The package says 4 enchiladas but there are usually five or six sitting on a bed of rice in this frozen dinner. It is mildly spicy, not spicy enough to burn your mouth or tongue. It cooks up quickly and is excellent for the nights when there isn't time to prepare a dinner The serving is enough for two or three people. If needed, a single person can store the remainder in the refrigerator for the next day. The chicken never has gristle but is purely meat which makes it non-vegetarian. There are different vegetables in the rice such as corn and the enchiladas have mashed beans, chicken, and cheese. I left out other vegetables but you get the idea. The price is very reasonable which is a big plus. Thank you, Walmart!

Delicious and filling!

We have these enchiladas every 2-3 weeks and enjoy them so much! I like that they're made with chicken rather than beef. They're prepared on a bed of Spanish rice. Just add a green vegetable and you have a complete meal. I serve them with sour cream and slices of fresh avocado. To me, these enchiladas are best baked in the oven. But, when it's summer in the South, I'll pop 'em in the microwave!
