Prepare Today Serve Tomorrow: Prepare 12 servings oats according to package directions. Transfer to a 3 to 4 quart container. Cool 15 minutes; cover and refrigerate. The next morning, cover and microwave on high for 6 to 11 minutes. Stir before serving. Servings (1 cup cooked): 33; 47 oz (13-1/2 cups + 3 tbsp) oats; 1 gallon + 3 quarts (28 cups) water; 1 tbsp salt (optional). Servings (1 cup cooked): 17; 24 oz (7 cups) oats; 1 gallon (16 cups) water; 2 tsp salt (optional). Servings (1 cup cooked): 2; 3 oz (3/4 cup + 2 tbsp) oats; 1-3/4 cups water; 1/4 tsp salt (optional). Preparation Directions: Direct Heat Method: In heavy saucepan, stir oats into briskly boiling salted water. Return to boil; reduce heat. Simmer 8 to 10 minutes, stirring occasionally. Let stand covered or transfer to steamtable pan and cover. Let stand 30 minutes or until all water is absorbed. Hold on steamtable on medium (no.5 setting) up to 3 hours. Stir before serving. Steam-Jacketed Kettle Method: Stir oats into briskly boiling salted water. Return to boil; reduce heat. Simmer 8 to 10 minutes, stirring occasionally. Transfer to steamtable pan and cover. Let stand 30 minutes or until all water is absorbed. Hod on steamtable on medium (no.5 setting) up to 3 hours. Stir before serving.
