We care about quality and are extremely picky about where our green coffee comes from. We work in a hybrid model where a portion of our coffees come from direct trade relationships with the farmers themselves, and the others are sourced from the most respected importing companies in Specialty Coffee. This guarantees that the farmers are being paid fair prices for their work which allows them to reinvest in their companies and communities. When you purchase single-origin coffee, that coffee has unique characteristics that are inherited from the soil it is grown in. As a specialty coffee roaster that specializes in single-origin coffee, we pride ourselves on roasting with a style that highlights those characteristics in every batch. Colombia is the 3rd largest coffee producing country in the world. Its size alone certainly contributes to the different profiles that its 20 coffee-growing departments produce in the cup, but even within growing regions there are plenty of variations due to the microclimates created by mountainous terrain, wind patterns, proximity to the Equator, and, of course, differences in varieties and processing techniques. The southwestern departments of Nariño, Cauca, and Huila tend to have higher altitude farms, which translates in more complex acidity and heightened fruits and florals in the profiles. You can expect to taste chocolate, caramel, toffee and light fruits in your cup.
