I make omelettes by "beating" the egg whites till stiff before adding yolks, salt/pepper, milk and optional sauted onions and tomatoes. Bottom won't burn before mixture appears cooked on top before flipping with these pans! Matching glass tops recommended.

Does an awesome job on omelettes!!
These pans heat evenly and make great omelettes. I'm so happy I bought them. Wish I had done it years ago. Great for cooking plain eggs, too. Non-stick works real well. (Really, my only minor complaint is that Calphalon never does a good job of packing their shipments, so they had surface scratches around the edges. In fact, they should sell these things in a box, so they can't get scratched.)

We have had Calphalon for over 20 years. The improvements compared to on the old set far over reached our expectations. The handles stay cool while cooking and the non-stick surface is super effective. We look forward ot upgrading more of our past pieces in the future.
