Safbrew T-58 Belgian Saison
Specialty yeast selected for its estery somewhat peppery and spicy flavor development. Yeast with a good sedimentation: forms no clumps but a powdery haze when resuspended in the beer. The liquid equivalents of this yeast are Wyeast 3724, or White Labs WLP 565. This strain was cultured from Saison du Pont. The recommended fermentation temperature of 59� to 69� will yeild a beer with spicy belgian characteristics although it also ferments very well at higher temperatures up to 77� producing more esters and fruity characteristics. This strain leaves higher residual sugars than its liquid counterparts, making it a good choice for Belgian pale ales and dubbels, a longer fermentation time will allow more complete attenuation desired for Saisons. Dry yeast stores very well for long periods, and when properly hydrated prior to pitching presents more active cells than liquid equivalents.
