I picked thins book based on a Reddit review, they described (and I've found it to be) full of delicious vegan recipes, that aren't overly hard to make, and don't require a ton of weird ingredients! So far I've loved the buffalo cauliflower wings, a tofu/mushroom/green bean stir fry, a cauliflower Thai red curry, hummus, and chia pudding! I'm impressed so far and can't wait to cook my way through it!
