Great Knife

I was lucky enough to receive an 8" Classic knife for Christmas and I've been nothing but impressed. Not sure how some of these other reviewers managed to break a forged steel blade, but this is the best knife I've ever owned, and with proper maintenance I'm going to make sure it stays that way for a long time.

Incredible Edge Retention

I have been using my Shun Classic 8" Chef's knife since 2006. I have a cheaper chef's knife I use to chop hard stuff like chocolate and nuts, but I have used the Shun for all of my other prep work for the last eight years. It is only now beginning to give me the first little hints that it might need to be sharpened sometime this year. I'm a lefty and, if I hadn't seen the question on the FAQ, it would never have occurred to me that the D-grip might be even more comfortable for right-handers. If you've got basic knife skills--i.e. the rudimentary skills necessary to know that "chopping" is done with a slicing motion, this knife will be a dream. Did I mention that it kept its edge for eight years?
