I took the top off the bottle and the aroma transported me home. Cardamon is such a versatile spice and this green cardamon is used in India, Ethiopia, Morroco etc. etc. It has an earthy and aromatic scent and flavor that creates a feeling of outdoor cooking over an open fire. This is not my culture, I am Scandinavian and wasn't sure if this extract would match my traditional cooking, but tried it and was completely blown away. For 70 years I have peeled and ground my cardamon for baking and I probably won't stop now but to be able to add a touch of cardamon flavor to french toast, waffles and even souffles... this is a dream come true. Be warned... this is a very strong extract so use caution. With the curry style dishes you can use the recommended amount - due to all the other flavors and aromas around it but if you are going for a dish with just this one spice... remember how strong it is and you really want just an illusion to blend with other flavors...
