On a vanilla making kick. I finally opened one of my bottles 5 years old of the Tahitian vanilla. I have been using up my vanilla from Mexico. The Tahitian is very different. Fruity floral scent and flavor. The bourbon vanilla may be better for baking but the Tahitian are nice for frosting, ice cream, etc.More delicate uses. My neighbor is a former chef, and I gave him a bottle of the 5 year old vanilla. He and his wife were quite impressed.

fitnclean vanilla beans worked great to make vanilla extract. I cut each one open and placed them all together inside of a vodka bottle and placed in a dark cabinet behind some other products. 6 months later we had some tasty vanilla extract for cooking.
