I like the texture and taste. The only thing that I dislike is when the sausage is cooking it leaves a hard brown coating in the pan and you have to scrape it out the pan.

you don't know it's turkey. the taste and texture is better than pork sausage and you don't ever find gristle in it. it also breaks up better when you fry it for putting in sausage gravy or sometimes i use it in lasagna
