The 3 different sizes allow for multiple food items to be cooked at the same time there by saving time. Also, they can take a lot of heat without warping. The food that sealed the "good quality" for me was my sheet pan pancake. I tested without a parchment and the p-cake flipped right out and browned well on the bottom.
