Waterleaf, Jewels of Opar, Surinam Spinach, Earth Ginseng plant

Waterleaf is a perennial plant that is native to Mexico, the Caribbean, West Africa, Central America, and much of South America.

Edible & Nutritious:

The leaves are rich in calcium, vitamin A, and vitamin C, making them a great addition to salads and traditional dishes in some cultures. The plant has large tuberous roots, similar to ginseng, which helps it store nutrients and survive tough conditions. The water leaf/jewels of opar is a succulent flowering herb grown for its edible leaves. They make a great container vegetable garden. Widely grown in tropical regions as a low maintenance leafy vegetable. Prefers semi shade and moist soil conditions.
