Thank you love the knife and balance most the thin blade and single bevel from the edge to the spine. I've been buying swilling and wusthof from the 70s, i bought a wusthof too but it had a secondary apex bevel thinner blade which despite thinner didn't cut as well.

We got our first 4 star knives (5 piece set) in the 1980s. We have since added steak knives, another paring knife plus Santoku and Nakiri models. The 5.5" prep is a new go to that is a really interesting "in-between" the European and Japanese styles.
